
Broccoli and Red Pepper Saute
Bright, eye-catching colors and crisp textures make this tasty and healthy dish a welcome addition to the table any time of the year.
Broccoli is a member of the crucifer family of vegetables, and studies have shown that a diet rich in these vegetables may decrease risks of cancer. Broccoli is also packed full of beta-carotene, vitamin C, fiber, calcium and potassium. To receive the maximum benefit from broccoli and to enhance the taste and texture - do not over cook!
1 tablespoon virgin organic olive oil
2 large garlic clove, diced
1 large sweet onion (Walla Walla or Candy onions are best), sliced thin
2 red bell peppers, seeded and thinly sliced
3 cups broccoli florets, cut into medium size pieces
3 tablespoons pine nuts
1/4 teaspoon cayenne pepper
season with sea salt and pepper to taste
Heat olive oil in large skillet. Saute garlic and onions until soft. Add red bell peppers and cayenne pepper stirring together with the onions. Add broccoli and pine nuts and stir-fry until broccoli is just tender. Caution - do not overcook! Season with salt and pepper an serve at once.
